So far, doctors and scientists have had little luck mapping meridians to visible anatomical structures, but some studies have uncovered overlap between ancient and modern medicine. For example, meridians tend to fall along planes between muscles, or between a muscle and bone or tendon—areas usually rich with connective tissue. A 2010 study published in PLOS One made one further connection: bands of collagenous tissue, in particular, present less opposition to the flow of electricity than other areas of the body. These bands underlie some—though not all—primary meridians, suggesting that the energy known as chi may be related in some way to the energy that zips through our power lines and singing toothbrushes.

Fourteen billion. On average, Americans eat about that many hamburgers each year—about one per week per person. Whether topped with gourmet ingredients or simply slathered in ketchup and mustard, each of those 14 billion burgers is built around the same core: a juicy patty of ground beef. To many, the key to a perfect burger lies in the type of meat—in particular, ground chuck or sirloin with a fat content of about 15%–20%. Any more fat can make the burger too greasy, and any less runs the risk of the meat drying out on the grill. For folks who like their beef on the rare side, cooking a burger is an even more delicate art. Unlike a steak, in which bacteria can only survive on the surface, hamburger meat is ground, which means heat needs to penetrate the entire patty in order for it to safely cook. This is why few burgers are ever cooked below medium—and why many chefs relish the challenge of crafting a burger without losing its juices or burning up the paper fortune inside.
Even before burgers, the grinder had been used as a way to make cuts of meat easier to prepare and enjoy. The practice can be traced back more than 5,000 years to the Mongolians, who would shred beef to make it more palatable. As for the origin of the hamburger, several parties lay claim to developing the sandwich, from a meatball vendor in small-town Wisconsin to two other vendors at the 1904 World’s Fair in St. Louis. According to the Library of Congress, however, the first hamburgers sizzled in a small lunch wagon in New Haven, Connecticut in 1895. The invention was more for economic reasons than culinary ones, though. Tired of making too many steak sandwiches to sell after the mid-day rush, the proprietor, Louis Lassen, decided to grind up his beef. In this way he was able to avoid having to waste any excess beef.

A typical recipe on the back of a rice package might go like this: add one cup of rice to two cups of water and simmer it until it’s tender and steaming. You’ll also have to make sure you leave some room at the top of the pot for the rice to expand—which is a little surprising when you think about it. Sure, the water is absorbed into the grains of rice, but you’ll typically end up with rice that’s greater in volume than the volume of both its components. And it’s not as if this happens with every food you toss in boiling water: think of noodles, or broccoli.
What’s going on here? Put simply, rice doesn’t just absorb water like a sponge. Instead, a complex rearrangement of molecules makes the starch in the rice change structure and actually take up more space, much as a suitcase does when placed in an airplane’s overhead bin. Inside each uncooked grain is a three-dimensional lattice of starch molecules that makes the grain tough and mostly impervious to water. But bring the water to a boil, and this all changes: the starch molecules themselves swell and eventually burst, losing that neatly stacked structure in the process. When that happens, amylose, one of the previously water-fearing chains of sugars that make up each starch molecule, escapes into the surrounding space and takes on a structure that itself holds water.
You can imagine each of these elements as a thread in a sweater: normally it lies flat, but start pulling out the threads and instead of a sweater you’ll end up with a much larger heap of knots and tangles perfect for a kitten’s prom dress. Because the molecules go from a neat arrangement to a complicated mass, the rice itself expands more than it would if it were simply full of water.
