For each condition an acupuncturist seeks to assuage, a timetable dictates when each meridian is most active and therefore easiest to treat. So far, doctors and scientists have had little luck mapping meridians to visible anatomical structures, but some studies have uncovered overlap between ancient and modern medicine. For example, meridians tend to fall along planes between muscles, or between a muscle and bone or tendon—areas usually rich with connective tissue. A 2010 study published in PLOS One made one further connection: bands of collagenous tissue, in particular, present less opposition to the flow of electricity than other areas of the body. A spray tan isn’t paint or makeup; it goes on clear. And it doesn’t affect melanin, the stuff that darkens skin exposed to sun. How does a spray tan work, then? It all comes down to a chemical called dihydroxyacetone—or DHA, as its friends call it.
DHA is a kind of sugar; like food sugars, it can even be derived from sugar cane or beets. When applied, it begins to interact with amino acids in the skin’s outer layer and turn it darker. But it’s not living tissue that it’s after: DHA associates mostly with the dead skin cells that cover your body. As these cells naturally fall off over time—which they do so frequently that after about a month, you have an entirely new epidermis—the color fades gradually until it’s back to its original state, usually after a week or so. That’s why salons recommend exfoliating before getting a spray tan: if you remove the skin cells that will be first to fall off anyway, your tan will last longer.
If spray-tan formulas all start out colorless, how can tanning salons offer different darkness levels? They simply up the concentration of DHA for clients who want to go darker. Those new to spray tanning should be careful, however. A higher concentration of DHA could mean a more orange tint, so starting at a light concentration and working your way up—or spacing out multiple applications at the same concentration—is wise. To counteract any tangerine tendencies, some formulas add a second chemical known as erythrulose. Derived from the sugars found in raspberries, erythrulose produces a reddish tint that complements the orange tones in DHA to create a more natural-looking color.

To many, the key to a perfect burger lies in the type of meat—in particular, ground chuck or sirloin with a fat content of about 15%–20%. Any more fat can make the burger too greasy, and any less runs the risk of the meat drying out on the grill. For folks who like their beef on the rare side, cooking a burger is an even more delicate art. Unlike a steak, in which bacteria can only survive on the surface, hamburger meat is ground, which means heat needs to penetrate the entire patty in order for it to safely cook. This is why few burgers are ever cooked below medium—and why many chefs relish the challenge of crafting a burger without losing its juices or burning up the paper fortune inside.
Even before burgers, the grinder had been used as a way to make cuts of meat easier to prepare and enjoy. The practice can be traced back more than 5,000 years to the Mongolians, who would shred beef to make it more palatable. As for the origin of the hamburger, several parties lay claim to developing the sandwich, from a meatball vendor in small-town Wisconsin to two other vendors at the 1904 World’s Fair in St. Louis. According to the Library of Congress, however, the first hamburgers sizzled in a small lunch wagon in New Haven, Connecticut in 1895. The invention was more for economic reasons than culinary ones, though. Tired of making too many steak sandwiches to sell after the mid-day rush, the proprietor, Louis Lassen, decided to grind up his beef. In this way he was able to avoid having to waste any excess beef.
